width:48px;height:48px; margin: 0; padding: 0; border: none; box-shadow: none;\" src=\"https:\/\/driftlessappetite.com\/wp-content\/plugins\/social-media-feather\/synved-social\/image\/social\/regular\/96x96\/rss.png\" \/><\/a><p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1214\" title=\"oniebriesoup\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2009\/12\/oniebriesoup.jpg\" alt=\"oniebriesoup\" width=\"900\" height=\"1178\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2009\/12\/oniebriesoup.jpg 900w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2009\/12\/oniebriesoup-229x300.jpg 229w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2009\/12\/oniebriesoup-782x1024.jpg 782w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/p>\n<p>Okay, so Leslie usually does the recipes, but I&#8217;ll take a whack at this one.\u00a0 This is a perfect soup for a cold winter night when you don&#8217;t want to cook but you want warm comfort food.\u00a0 Because it&#8217;s so quick to make, it&#8217;s also great for when guests come over.<\/p>\n<p><strong><!--more-->RECIPE<\/strong><\/p>\n<ul>\n<li><em><em>3 medium sized onions, sliced (got ours from <a href=\"http:\/\/www.kingshillfarm.com\/\">King&#8217;s Hill Farm<\/a> in Mineral Point)<br \/>\n<\/em><\/em><\/li>\n<li><em><em>3 tablespoons red miso paste<\/em><\/em><\/li>\n<li><em>2 tablespoons butter (ours is <a href=\"http:\/\/\">Shullsburg Creamery<\/a>).<br \/>\n<\/em><\/li>\n<li><em><em>2 tablespoons good olive oil<\/em><\/em><\/li>\n<li><em>a dash of curry powder<br \/>\n<\/em><\/li>\n<li><em><em>a dash turmeric<br \/>\n<\/em><\/em><\/li>\n<li><em>1 tablespoon tomato paste<br \/>\n<\/em><\/li>\n<li><em><em>4 cups water<\/em><\/em><\/li>\n<li><em>1 baguette, sliced<\/em><\/li>\n<li><em>1 brie, sliced (used <a href=\"http:\/\/\">President<\/a>, thanks D)<br \/>\n<\/em><\/li>\n<\/ul>\n<p>It&#8217;s pretty much your basic onion soup with a few substitutions.\u00a0 First, we use miso paste instead of any kind of broth.\u00a0 No real reason for this except 1) the first time we made it this way we needed it to be vegetarian and 2) I just really like the taste of miso paste.\u00a0 And instead of the gruyere normally used for french onion soup, we&#8217;ve gone with a brie.\u00a0 This only works, I think, because it was a very young brie so the flavor was pretty subtle and didn&#8217;t overpower everything else.\u00a0 The brie was bought right at the factory, only about a week old.\u00a0 Go light on the turmeric and the curry powder; not so much that you can identify them, just a bit to add some complexity (and aid digestion).<\/p>\n<p>I&#8217;m sure you could figure this out, but anyways: cook the sliced onions slowly in the butter and olive oil until desired texture\/color is reached.\u00a0 Add miso, tomato paste, water &amp; spices and heat for another 5 minutes.\u00a0 Ladle soup over baguette slices in a bowl, top with brie and pop it under the broiler until the cheese is soft and slightly browned.\u00a0 Enjoy.<\/p>\n<p><strong>Meal 2<\/strong><\/p>\n<p>We always make too much soup.\u00a0 It&#8217;s hard to just make soup for 2 people, I usually end up with about 16 servings.\u00a0 Rather than just eating soup for 7 more days, I wanted to find another use for it.\u00a0 The next night we made steaks (from Oak-Del Dairy &amp;
