width:48px;height:48px; margin: 0; padding: 0; border: none; box-shadow: none;\" src=\"https:\/\/driftlessappetite.com\/wp-content\/plugins\/social-media-feather\/synved-social\/image\/social\/regular\/96x96\/rss.png\" \/><\/a><p>A couple of weeks ago, Keith and I had the pleasure to eat some authentic Indian food at the home of friends Harshad and Smita.\u00a0 The food was prepared by Smita and her mother in law who is currently visiting the States.\u00a0 So naturally, we had to take advantage of her expertise and\u00a0invited ourselves over to their place.\u00a0 Our meals consisted of:\u00a0 yellow lentil daal, chole (chick peas), palak paneer (spinach and cheese), vegetable jalfrezi, mango pulp, and tomato bhaji.\u00a0 We also had some naan, poori, and bay laurel scented basmati rice.\u00a0<\/p>\n<p>My favorite dish was the tomato bhaji.\u00a0 I could just eat\u00a0it everyday.\u00a0 Smita was kind enough to share the recipe with everyone.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/04\/indianmeal.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1442\" title=\"indianmeal\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/04\/indianmeal.jpeg\" alt=\"\" width=\"900\" height=\"1500\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/04\/indianmeal.jpeg 900w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/04\/indianmeal-180x300.jpg 180w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/04\/indianmeal-614x1024.jpg 614w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p><strong><!--more-->RECIPE<\/strong><\/p>\n<p><strong>Tomato Bhaji<\/strong><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li><em>2 medium sized tomatoes (cubed)<\/em><\/li>\n<li><em>1\/2 c. onions (cubed)<\/em><\/li>\n<li><em>1 t. oil<\/em><\/li>\n<li><em>1\/4 t.\u00a0 cumin seeds<\/em><\/li>\n<li><em>1 pinch <a href=\"http:\/\/en.wikipedia.org\/wiki\/Asafoetida\">asafoetida<\/a><\/em><\/li>\n<li><em>1\/8 t. turmeric powder<\/em><\/li>\n<li><em>2-3 pieces curry leaves<\/em><\/li>\n<li><em>2-3 green chilies<\/em><\/li>\n<li><em>1\/2 t. ginger paste<\/em><\/li>\n<li><em>1 t. sugar or <a href=\"http:\/\/en.wikipedia.org\/wiki\/Jaggery\">jaggery<\/a><\/em><\/li>\n<li><em>3 T. crushed peanuts<\/em><\/li>\n<li><em>salt<\/em><\/li>\n<li><em>cilantro<\/em><\/li>\n<\/ul>\n<p>Heat the oil in a pan and let it get really hot.\u00a0 Then add the cumin, asafoetida, turmeric, curry leaves, green chilies.
