stand and I thought rice and peas for one of our weeknight meals would be perfect.\u00a0 It was also a steal at $3.00 a\u00a0pound.\u00a0<\/p>\n<p>Not to be confused with the classic Venetian dish, <a href=\"http:\/\/culinariaitalia.wordpress.com\/2008\/06\/13\/risi-e-bisi\/\">risi e bisi<\/a>, which is more of a soup\/stew, our version has a thicker and creamier consistency.\u00a0<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/07\/risiebisi.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1657\" title=\"risiebisi\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/07\/risiebisi.jpeg\" alt=\"\" width=\"1000\" height=\"632\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/07\/risiebisi.jpeg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/07\/risiebisi-300x189.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><strong><!--more-->RECIPE<\/strong><\/p>\n<p><em><strong>Risotto con Zafferano e Piselli <\/strong>(Risotto with Saffron\u00a0and Peas)<\/em><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li><em>1\/2 onion diced<\/em><\/li>\n<li><em>2 cloves of garlic minced<\/em><\/li>\n<li><em>2 T. olive oil<\/em><\/li>\n<li><em>3 c. rice (we only had jasmine rice on hand\u00a0so that&#8217;s what we used)<\/em><\/li>\n<li><em>a few strands of saffron<\/em><\/li>\n<li><em>1 c. water<\/em><\/li>\n<li><em>1 c. milk (<a href=\"http:\/\/www.organicvalley.coop\/products\/milk\/reduced-fat-2\/\">Organic Valley<\/a>)<\/em><\/li>\n<li><em>1 c. shredded fontina cheese<\/em><\/li>\n<li><em>1\/2 c. shredded parmigiano reggiano<\/em><\/li>\n<li><em>3 T. butter (<a href=\"http:\/\/shullsburgcreamery.com\/our_brands\/index.php?brandname=shullsburg_creamery\">Shullsburg Creamery<\/a>)<\/em><\/li>\n<li><em>salt and pepper to taste<\/em><\/li>\n<li><em>3\/4 c. shelled peas<\/em><\/li>\n<\/ul>\n<p>Estimated cooking time: 45 minutes<\/p>\n<p>Sautee the onions and garlic until transluscent.\u00a0 Put the rice and saffron into the pan and mix.\u00a0 Add the water and cook on medium heat (you should see only a few bubbles rising)\u00a0while constantly stirring.\u00a0 Add the milk a little bit at a time.\u00a0 You might have to add more water as needed.\u00a0 When the rice is\u00a0almost al dente, add the cheeses, butter, salt, and pepper.\u00a0 Turn off the heat when the rice is al dente\u00a0and put the peas in.\u00a0 Cover and let it sit for a few minutes.\u00a0 Serve warm with some shredded parmigiano on top.<\/p>\n<p>We loved how the dish turned out and we were glad to have quite a bit leftover since we used 3 cups of rice.\u00a0 It tasted great cold for lunch the next day and the next!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Last Saturday at the market, we\u00a0saw these lovely shelling peas at Mary Buckhaus&#8217;
