garden in Illinois.\u00a0 When I was young it was &#8220;Leslie finish your ampalaya before you can leave the dinner table.&#8221;\u00a0 Believe me, it was a lot worst than what some American kids have to go through with brocolli.\u00a0 After many years, I finally grew to love the last of the basic tastes, bitterness.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/ampalaya.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1850\" title=\"ampalaya\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/ampalaya.jpeg\" alt=\"\" width=\"1000\" height=\"725\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/ampalaya.jpeg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/ampalaya-300x217.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><!--more-->There are <a href=\"http:\/\/en.wikipedia.org\/wiki\/Taste\">five basic tastes<\/a>:\u00a0 sweetness, sourness, saltiness, savoriness (<a href=\"http:\/\/en.wikipedia.org\/wiki\/Umami\">umami<\/a>), and bitterness.\u00a0 The first taste humans love is sweetness which you can observe in candy crazed children.\u00a0 As we evolve our palates seek more and more\u00a0complex tastes.\u00a0 Some people\u00a0are extremely sensitive to bitterness so they might avoid the flavor completely, even as adults.\u00a0 The ampalaya is very healthy and rich in vitamin C, vitamin B, zinc, potassium, and it&#8217;s also low in calorie.\u00a0\u00a0<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/16910221\">Current research<\/a> has suggested that it\u00a0may also help in the treatment of Type 2 diabetes.\u00a0 I have seen them sold at the <a href=\"http:\/\/madisonfarmersmarket.com\/\">Madison farmer&#8217;s market<\/a> if you&#8217;re brave enough\u00a0to try it.<\/p>\n<p style=\"text-align: center;\"><em><a href=\"http:\/\/www.mineralpointmarket.com\/shooting-star-farm.htm\">Tippy Top Organic<\/a> Garlic<\/em><\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/garlic.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1851\" title=\"garlic\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/garlic.jpg\" alt=\"\" width=\"1000\" height=\"688\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/garlic.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/garlic-300x206.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p>To make this meal even healthier, I decided to add some garlic from <em>Tippy Top Organic Orchard<\/em>.\u00a0 They\u00a0are incredibly pungent and huge (that&#8217;s a penny for scale).\u00a0 Each clove being\u00a0twice as big as my thumb.\u00a0<\/p>\n<p style=\"text-align: center;\"><em>Fresh Farm Eggs &amp; Sliced Garlic<\/em><\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/farmeggs.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1855\" title=\"farmeggs\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/farmeggs.jpg\" alt=\"\" width=\"1000\" height=\"695\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/farmeggs.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/farmeggs-300x208.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><strong>RECIPE <\/strong><\/p>\n<p><strong><em>Itlog at Ampalaya<\/em><\/strong><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li><em>1 young ampalaya (bitter melon)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 *younger = less bitter<\/em><\/li>\n<li><em>2 eggs<\/em><\/li>\n<li><em>1 large garlic clove<\/em><\/li>\n<li><em>1 T. oil<\/em><\/li>\n<li><em>salt<\/em><\/li>\n<li><em>black pepper<\/em><\/li>\n<\/ul>\n<p><em>Soaking Liquid<\/em><\/p>\n<ul>\n<li><em>1 cup water<\/em><\/li>\n<li><em>1 t. salt<\/em><\/li>\n<\/ul>\n<p>Wash and clean the bitter melon.\u00a0 Scoop out the pith.\u00a0 Slice and soak in the saltwater solution for 15 minutes to half an hour.\u00a0 The longer you soak it, the less bitter it gets.\u00a0 After soaking, squeeze the vegetable pieces\u00a0and gently dry with a paper towel.\u00a0 Heat the oil in the pan gently.\u00a0 Add the ampalaya then the garlic and sautee for about 3 minutes.\u00a0 Add the beaten eggs, salt, and pepper.\u00a0 Serve with steamed jasmine rice and maybe\u00a0another clove of garlic\u00a0\ud83d\ude42\u00a0<\/p>\n<p><em><\/em>\u00a0<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/itlogatampalaya.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1852\" title=\"itlogatampalaya\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/itlogatampalaya.jpg\" alt=\"\" width=\"1000\" height=\"762\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/itlogatampalaya.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/08\/itlogatampalaya-300x228.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Have you ever had seen or heard about this\u00a0warty looking vegetable?\u00a0\u00a0The ampalaya belongs\u00a0to the same family as pumpkins and watermelons.\u00a0 Unlike pumpkins and watermelons, ampalaya is\u00a0extremely bitter.\u00a0 Recently, I brought a couple of pieces home from my grandparents&#8217;
