333 years, the Spanish ruled the Philippines.\u00a0 They had a dessert called manjar blanco made with almonds, milk, sugar, and gelatin.\u00a0 It is similar to blancmange or panna cotta.\u00a0 The name literally translates to &#8220;white delicacy&#8221; because of its original color but people have altered it and have produced\u00a0their own versions using ingredients such as citrus, berries, or chocolate.\u00a0\u00a0The Northern Filipino\u00a0version called maja blanca is made of coconut milk, fresh corn, and agar agar (a gelatin substitute made from seaweed) because these ingredients were plentiful.\u00a0 I love its buttery yellow hue.<\/p>\n<p>I remember my Great Uncle Jesus making this dessert back in the old country.\u00a0 (He was named Jesus because he was born on Christmas Day, another thing the Spanish brought to the Philippines.)\u00a0 His way\u00a0of making this dessert involved a lot more work\u00a0than how I made my version.\u00a0 He\u00a0would go pick out some\u00a0mature coconuts, grate the meat, and\u00a0squeeze out\u00a0the milk using a cheesecloth.\u00a0 After that, he would harvest some young corn from the field,\u00a0\u00a0grate, then also squeeze out the milk using the same process mentioned above.\u00a0 After that he\u00a0brought\u00a0the coconut milk and corn liquid slowly to a simmer then\u00a0added some sugar.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/freshcorn.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2056\" title=\"freshcorn\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/freshcorn.jpg\" alt=\"\" width=\"1000\" height=\"735\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/freshcorn.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/freshcorn-300x220.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/majamais3.jpg\"><\/a><\/p>\n<p><!--more-->Sometimes he used cornstarch to set it and other times he used agar agar.\u00a0 He would then pour the hot liquid into a thin pan then he let it sit on the dining table to set.\u00a0 That was the hardest part for me.\u00a0 I remember testing it probably every few minutes with a finger.\u00a0 By the time it was ready you could see finger dents on the edges!\u00a0 I can never get the recipe\u00a0out of him\u00a0so I made my own recipe using my memory of how it tasted.\u00a0 I think this was pretty darn close though he would probably not approve of diluting the coconut milk with cow&#8217;s milk and water but I didn&#8217;t want it to be too fatty.<\/p>\n<p><strong>RECIPE<\/strong><\/p>\n<p><strong><em>Maja Blanca (My Version)<\/em><\/strong><\/p>\n<ul>\n<li><em>4 ears of corn (the equivalent of 2 cups)<\/em><\/li>\n<li><em>1 c. water<\/em><\/li>\n<li><em>1 c.\u00a0 2% milk<\/em><\/li>\n<li><em>1\/4 cup canned coconut milk\u00a0 (I used the Chaokoh brand.\u00a0 Make sure to stir it before using because some parts will be more solid.)<\/em><\/li>\n<li><em>1\/2 c. sugar (You can use less if you want.\u00a0 Some corn are sweeter than others.)<\/em><\/li>\n<li><em>1\/4 c. agar agar powder\u00a0 *Use half of this if you want it more &#8220;jiggly&#8221;.\u00a0 I like mine a little firm.\u00a0 (You can find this ingredient\u00a0in most Asian\u00a0 grocery stores or at Whole Foods Market.)<\/em><\/li>\n<\/ul>\n<p>Cut the corn off the cob.\u00a0 Place the corn in a blender along with 1 cup water.\u00a0 Strain using a fine metal sieve or cheese cloth.\u00a0 In a medium sized pan gently bring the corn liquid, coconut milk, and sugar to a simmer.\u00a0 Simmer for about 5 minutes then add the agar agar powder.\u00a0 Cook for 2 more minutes then transfer into a mold or a shallow pan (if you want to eat it sooner).\u00a0 *Strain as your are pouring it into the mold or pan for a smooth consistency.\u00a0 If you&#8217;re using a mold, place\u00a0it on a sheet pan so that you don&#8217;t burn your fingers like I did when you transport it to the refrigerator.\u00a0 Cover with plastic wrap and let it cool in the refrigerator.\u00a0 It will take about a couple hours to cool and set.\u00a0 Put the filled mold in a large bowl with some hot water to loosen the maja blanca then\u00a0flip onto a serving plate.\u00a0 Slice and serve.\u00a0 It is served with latik (coconut milk that has been cooked for a long time until golden brown and curdled).\u00a0 You can substitute using some toasted coconut flakes or enjoy as is.<\/p>\n<p><a
