width:48px;height:48px; margin: 0; padding: 0; border: none; box-shadow: none;\" src=\"https:\/\/driftlessappetite.com\/wp-content\/plugins\/social-media-feather\/synved-social\/image\/social\/regular\/96x96\/rss.png\" \/><\/a><p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/gnocchi.jpg\"><\/a><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/gnocchiwithbluecheese.jpg\"><\/a>We were shopping at the <a href=\"http:\/\/www.driftlessmarket.com\/\">Driftless Market <\/a>in Platteville last weekend and we picked up a slice of Dunbarton Blue from the <a href=\"http:\/\/www.roellicheese.com\/\">Roelli Cheese Haus<\/a>\u00a0 in Shullsburg.\u00a0 We&#8217;d never had anything from Roelli before, even though we drive past their store whenever we\u00a0go down to Illinois to visit Leslie&#8217;s family.\u00a0 For some reason, Roelli wasn&#8217;t on my radar in the same way <a href=\"http:\/\/www.uplandscheese.com\/\">Uplands<\/a>, <a href=\"http:\/\/www.hookscheese.com\/\">Hook&#8217;s<\/a>, <a href=\"http:\/\/www.pcmli.com\/cw_bk.htm\">Fayette Creamery<\/a>, or other local artisan cheesemakers.\u00a0 Well, the imperfection was mine.\u00a0 And I&#8217;ve been <em>really<\/em> missing out.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonbluewrapper.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2104\" title=\"dunbartonbluewrapper\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonbluewrapper.jpg\" alt=\"\" width=\"1000\" height=\"759\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonbluewrapper.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonbluewrapper-300x227.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p>Dunbarton Blue is\u00a0nutty, cheddary, subtle\u00a0blue cheese created by cheesemaker Chris Roelli (you might recognize him\u00a0as Mr. March from your <a href=\"http:\/\/cheeseunderground.blogspot.com\/2010\/09\/chesemaker-pin-up-calendar.html\">Wisconsin Cheesemakers 2011 calendar<\/a>).\u00a0 It is relatively new; I believe it&#8217;s been on the market since 2009.\u00a0 I hear it&#8217;s been selling very well, particularly in Chicago, but it hasn&#8217;t gotten the same press\u00a0as other (deserving) cheeses like<a href=\"http:\/\/cheeseunderground.blogspot.com\/2010\/08\/pleasant-ridge-reserve-wins-acs.html\"> Pleasant Ridge <\/a>or <a href=\"http:\/\/www.usatoday.com\/news\/offbeat\/2009-12-05-aged-wisconsin-cheddar_N.htm\">Hook&#8217;s 15 year cheddar<\/a>.\u00a0 I don&#8217;t know Chris Roelli, so I can&#8217;t give you any details about how\u00a0he makes the cheese you can&#8217;t get from other reviews (<a href=\"http:\/\/www.slashfood.com\/2010\/04\/06\/dunbarton-blue-cheese-course\/\">here<\/a> and <a href=\"http:\/\/www.chicagoreader.com\/TheBlog\/archives\/2010\/03\/23\/one-bite-dunbarton-blue\">here<\/a>, for example).\u00a0 The closest comparison\u00a0I can think of is Blue Mont&#8217;s bandage wrapped reserve (another favorite), but really even those two are quite different.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonblue.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2105\" title=\"dunbartonblue\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonblue.jpg\" alt=\"\" width=\"1000\" height=\"713\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonblue.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/dunbartonblue-300x213.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><!--more-->Like I said, I don&#8217;t know Chris Roelli, but I can judge him based on this cheese, and by that measure he really knows what he&#8217;s doing.\u00a0 The complexity of the cheese is quite striking, with the nutty cheddar flavor blending with the earthiness of the blue veins, and the texture ranging from crystalline at the outside to almost spreadable in the center.\u00a0 Unlike some other complex earthy cheeses though, we found the Dunbarton Blue played well with others and didn&#8217;t overpower subtle ingredients.<\/p>\n<p>So&#8230; what did we do with it?\u00a0 Well, the first half of the slice was gone before we could even find crackers to put it on.\u00a0 We wanted to something a bit different with the rest of it, and since the week before Leslie had just seen the <a href=\"http:\/\/2.bp.blogspot.com\/_dPkk1ttPmqo\/TBbxox0iyUI\/AAAAAAAACqE\/Qk_iyHs4TIk\/s1600\/godfather+iii.jpg\">Godfather\u00a0III<\/a> for the first time, we decided to make gnocchi.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/gnocchiwithbluecheese1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2111\" title=\"gnocchiwithbluecheese\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/gnocchiwithbluecheese1.jpg\" alt=\"\" width=\"1000\" height=\"791\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/gnocchiwithbluecheese1.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/09\/gnocchiwithbluecheese1-300x237.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p>I had never made gnocchi before (actually, I&#8217;d only eaten gnocchi 3 times in my life).\u00a0 When in doubt, I turn to <a href=\"http:\/\/adobolife.typepad.com\/diningwithbatali\/\">Mario<\/a>.\u00a0 The following is Batali&#8217;s basic gnocchi recipe, modified slightly for my purposes:<\/p>\n<ul>\n<li>4 medium sized red potatoes, from\u00a0Buckhaus Farms\u00a0at the <a href=\"http:\/\/www.mineralpointmarket.com\/vendors.htm\">Mineral Point Farmer&#8217;s Market<\/a><\/li>\n<li>2+ cups all purpose flour (uhh&#8230; from the grocery store.\u00a0 Don&#8217;t have a good local flour source)<\/li>\n<li>1 large egg\u00a0from the Mason family farm<\/li>\n<li>1\/4 cup crumbled Dunbarton Blue (from <a href=\"http:\/\/www.roellicheese.com\/\">Roelli Cheese<\/a>, Shullsburg)<\/li>\n<li>1\/4 stick of butter (<a href=\"http:\/\/www.shullsburgcreamery.com\/\">Shullsburg Creamery<\/a>, also Shullsburg)<\/li>\n<li>1\/4 cup good olive oil (from Montecatini Terme, Tuscany)<\/li>\n<li>1\/2 cup broccoli (from <a href=\"http:\/\/www.mineralpointmarket.com\/shooting-star-farm.htm\">Shooting Star Farms<\/a>)<\/li>\n<li>1 slice bacon (from <a href=\"http:\/\/www.savorwisconsin.com\/alllistings\/detail.asp?recordid=426&amp;table=producer\">Marr&#8217;s Valley View Farms<\/a>)<\/li>\n<li>salt &amp; black pepper<\/li>\n<li>dried sage (from our garden)<\/li>\n<\/ul>\n<p>Boil the potatoes for ~ 50 minutes, until soft.\u00a0 Peel the skin and sred potato into fluffy flakes (we actually had fairly lumpy potatoes and it was no problem).\u00a0 Mix in 2 cups\u00a0of flour and the egg into the potato just like you were making normal pasta.\u00a0 Work the dough for around 5 minutes until it is dry and smooth.\u00a0 Add more flour if it&#8217;s still wet.\u00a0 Roll out the dough into 1\/2 inch diamter ropes and cut into 1\/2 inch segments, then\u00a0press a fork into the side\u00a0to add ridges.\u00a0\u00a0Toss the gnocchi into boiling water and cook until they float to the surface (about 1 minute).\u00a0 Using a slotted spoon, quickly transfer into ice water to stop cooking.
