Brussels sprouts (about 1 dozen heads)<\/em><\/li>\n<li><em>1 med. shallot<\/em><\/li>\n<li><em>1 T. canola oil<\/em><\/li>\n<li><em>5T. butter, divided<\/em><\/li>\n<li><em>3 T. white wine<\/em><\/li>\n<li><em>\u00bd lb. Carr Valley Creama Kasa cheese<\/em><\/li>\n<li><em>1 \u00bd c. heavy cream<\/em><\/li>\n<li><em>2 T. flour<\/em><\/li>\n<li><em>salt and pepper to taste<br \/>\n<\/em><\/li>\n<li><em>About \u00bd cup of crushed chicharr\u00f3nes (pork rinds)<\/em><\/li>\n<\/ul>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/12\/macncheese3.jpg\"><\/a><\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>Bring a large pot of water to a boil; add the pasta. Undercook the pasta by 4-5 minutes according to the directions. Drain the pasta and set aside.<\/p>\n<p>Meanwhile, clean and slice the Brussels sprouts into sixths. Thinly slice the shallot. Heat a pan, add canola oil and 2 tablespoons butter, then cook the shallot slices until semi-transparent. Add the Brussels sprouts and cook 8 minutes. Season with salt and pepper. When the Brussels sprouts are\u00a0bright green, add the white wine, lower the heat,\u00a0 and cover the pan. Continue to cook\u00a0for at least\u00a08 more minutes.<\/p>\n<p>In a large bowl, combine the cheese, heavy cream, 3 tablespoons melted butter, flour, salt and pepper. Mix and set aside until the pasta is ready.<\/p>\n<p>Add the cooked pasta, shallots and Brussels sprouts \u00a0to the cream mixture and stir to combine. Pour everything into a baking dish. (I used a deep pie dish to bake mine.) Top with the crushed chicharr\u00f3nes. Save a little bit for additional topping right before serving. Bake for 30-35 minutes until bubbly and golden brown.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/12\/macncheeseprep.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2542   aligncenter\" title=\"macncheeseprep\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/12\/macncheeseprep.jpeg\" alt=\"\" width=\"1000\" height=\"817\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/12\/macncheeseprep.jpeg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2010\/12\/macncheeseprep-300x245.jpg 300w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p>The pot of water should be boiling by now, pour half a bag of the pasta (or \u00bd lb.) into the water. Undercook the pasta by at least 4-5 minutes according to the directions.<\/p>\n<p>Shred the cheese into a large bowl. Add to it the heavy cream, 3 T. of melted butter, flour, salt and pepper. Mix and set aside until the pasta is ready.<\/p>\n<p>Place a nice handful of chicharr\u00f3n into a plastic bag and crush with a rolling pin.<\/p>\n<p>Mix the pasta, cream mix, and vegetables. Pour everything into a baking dish. (I used a deep pie dish to bake mine.) Top with the crushed chicharr\u00f3nes. Save a little bit for additional topping right before serving.
