\/><\/a><p>Like most people, I make dinner based on what&#8217;s already available in the house.\u00a0 Here is our delicious meal from last Friday.\u00a0 Naming the dish was a bit difficult\u00a0because it was inspired by a Filipino dish called <em>pata tim<\/em> but it wasn&#8217;t exactly like it.\u00a0 Plus, I probably committed a sin by\u00a0serving it with polenta\u00a0instead of\u00a0steamed rice.\u00a0 Sorry grandpa.\u00a0 Pata tim is usually a fatty pork leg with the skin still attached.\u00a0 It is marinated for at least \u00a0a day\u00a0in a mixture of\u00a0soy sauce, garlic, bay leaves, brown sugar, and lots of black pepper (ground and whole).\u00a0 After that it is deep fried and then slow braised\u00a0in the marinating mixture with the addition of fresh or canned pineapple slices.<\/p>\n<p>Well I didn&#8217;t have the pork leg but I did have a pound and three quarters of pork shoulder from <a href=\"http:\/\/www.mineralpointmarket.com\/marrs-valley-view-farms.htm\">Marr&#8217;s Valley View Farm<\/a>.\u00a0 I ran out of regular soy sauce but I did have kecap manis, a viscous and sweetened version of soy sauce from Indonesia.\u00a0 The bay leaves were Turkish and they fresh pineapple was from Costa Rica.\u00a0 I had some fresh pineapple\u00a0in the house because I decided that winter should be tropical fruit appreciation season.\u00a0 After a quick look in the freezer, I just realized that the <a href=\"http:\/\/www.wholefoodsmarket.com\/\">Whole Foods<\/a> brand of frozen haricot verts is from Belgium.\u00a0 The bag of grits is from Oregon.\u00a0 Just to cover everything, I have no idea where the black pepper and garlic came.\u00a0 Cooking with local ingredients in winter is quite a challenge as you can see unless you are <a href=\"http:\/\/www.starchefs.com\/features\/tory_miller\/html\/index.shtml\">Tory Miller<\/a>.\u00a0 It&#8217;s\u00a0impossible to live on root vegetables,\u00a0various pickled products\u00a0and meat all winter.\u00a0 Well, at least, I cannot.\u00a0 I should probably now\u00a0change\u00a0the blog name to &#8220;Drifting Appetite&#8221;.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2011\/01\/pineapplebraisedporkwithpolenta1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter \/><\/a><\/p>\n<p><strong><!--more-->RECIPE<\/strong><\/p>\n<p><strong>Pineapple Braised Pork<\/strong><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li><em>1.75 lb. pork shoulder<\/em><\/li>\n<li><em>1 c. pineapple juice<\/em><\/li>\n<li><em>1 c.\u00a0cubed pineapple<\/em><\/li>\n<li><em>4 T. kecap manis<\/em><\/li>\n<li><em>1 t. ground black pepper<\/em><\/li>\n<li><em>1 t. whole black peppercorns<\/em><\/li>\n<li><em>3 pieces bay leaves<\/em><\/li>\n<li><em>3-5 cloves of garlic<\/em><\/li>\n<li><em>1 t. salt<\/em><\/li>\n<\/ul>\n<p>Preheat oven to 325 degrees F.\u00a0 Put everything in an enameled cast iron pan.\u00a0\u00a0(I started out\u00a0with a\u00a0frozen piece of meat.)\u00a0Cover.\u00a0 Place\u00a0the pan in the oven once it&#8217;s up to temperature.\u00a0 Cook for one hour.\u00a0 After one hour, lower heat to 250 degrees F then leave it in the oven for about 4 hours.\u00a0 Add another hour if you want the sauce to be more concentrated.<\/p>\n<p><strong>Polenta<\/strong><\/p>\n<p>I made the polenta in the last hour of cooking the meat.\u00a0 That way, it&#8217;s still warm at serving time.<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li><em>6 c. water<\/em><\/li>\n<li><em>2 c. grits<\/em><\/li>\n<li><em>2 T. butter<\/em><\/li>\n<li><em>1 t. salt<\/em><\/li>\n<\/ul>\n<p>Let the water come to a boil, salt it, then add the grits slowly while\u00a0stirring.\u00a0\u00a0Turn the heat down and let the mixture simmer, stirring constantly for about half an hour (the most laborious part of the meal).\u00a0 After that, pour the mixture into a pan (I used a pie pan).<\/p>\n<p>Overall, the meal\u00a0had fantastic combination of flavors.\u00a0 One might call\u00a0this fusion cooking
