width:48px;height:48px; margin: 0; padding: 0; border: none; box-shadow: none;\" src=\"https:\/\/driftlessappetite.com\/wp-content\/plugins\/social-media-feather\/synved-social\/image\/social\/regular\/96x96\/rss.png\" \/><\/a><p>This dessert is popularly known as <em>brazo de Mercedes <\/em>(translation, the arm of the Virgin Mary<em>)<\/em> in the Philippines.\u00a0 With the population consisting of about 90% practicing Christians (mostly Catholic) it&#8217;s no surprise that religion has influenced the food.\u00a0 Or could it be the other way around?\u00a0 Maybe <em>brazo<\/em> is that good!\u00a0 Filipinos love to get together and eat, a lot.\u00a0 I\u00a0don&#8217;t think I can\u00a0remember ever\u00a0going to a Filipino party with less than 50 people attending.\u00a0 If you wanna be in the know they are called prayers not parties (but of course they have those too).\u00a0 I kid you not, it&#8217;s possible to never have to cook for a month if you just go all the prayers and parties.\u00a0 I am speaking from experience living in Champaign, Illinois where there is a huge Filipino community.\u00a0 With Easter coming up this weekend, this dessert is sure to show up on many tables.<\/p>\n<p style=\"text-align: center;\"><em>Brazo de Mercedes\u00a0<\/em><\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/04\/meringuecustardroll3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3799\" title=\"meringuecustardroll\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/04\/meringuecustardroll3.jpg\" alt=\"\" width=\"1000\" height=\"667\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/04\/meringuecustardroll3.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/04\/meringuecustardroll3-300x200.jpg 300w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/04\/meringuecustardroll3-150x100.jpg 150w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/04\/meringuecustardroll3-400x266.jpg 400w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p style=\"text-align: left;\"><!--more-->\u00a0I have about five friends\u00a0who I get eggs from.\u00a0 Lately the chickens have been laying so many eggs that I&#8217;ve been getting extra eggs for free.\u00a0 I had to\u00a0use them up so I though I would make <em>brazo<\/em> for the first time.\u00a0 I got\u00a0the basic\u00a0recipe from a family friend, Tita (Aunt) Nissa.\u00a0\u00a0(Thanks Tita!)\u00a0 My modifications include less butter, adding the zest of a whole lemon to the custard and cooking it slow and long\u00a0using a double boiler to get a semi-opaque, shiny, and creamy custard.<\/p>\n<div style=\"text-align: center;\">\u00a0<em>Ingredients &amp; First you want to make the custard.
