Spanish olive oil<\/em><\/li>\n<li><em>1 whole onion<\/em><\/li>\n<li><em>1 rib of celery<\/em><\/li>\n<li><em>1 poblano pepper<\/em><\/li>\n<li><em>1 handful shitake mushrooms<br \/>\n<\/em><\/li>\n<li><em>2 T. minced garlic<\/em><\/li>\n<li><em>1 smoked andouille sausage (from <a href=\"http:\/\/www.savorwisconsin.com\/AllListings\/detail.asp?recordid=1957&amp;table=producer\">Gorman&#8217;s Meat Locker in Lone Rock<\/a>)<\/em><\/li>\n<li><em>2 T. capers<\/em><\/li>\n<li><em>1 large tomato<\/em><\/li>\n<li><em>2 T. tomato paste<\/em><\/li>\n<li><em>2 c. low sodium chicken\/vegetable stock<\/em><\/li>\n<li><em>a few saffron strands<\/em><\/li>\n<li><em>1 t. cumin<\/em><\/li>\n<li><em>2 t. paprika<\/em><\/li>\n<li><em>salt<\/em><\/li>\n<li><em>pepper<\/em><\/li>\n<\/ul>\n<p>*I used a 12 inch cast iron pan.<\/p>\n<p>Clean and chop everything into small cubes except for the pepper and sausage.\u00a0 Slice sausage on the bias.\u00a0 Sautee onion and celery\u00a0 in olive oil until semi translucent.\u00a0 Roast pepper in an open flame or broil in the oven.\u00a0 Chop and add to the pan.\u00a0 Add the rest of the solid ingredients and cook until the tomato breaks down.\u00a0 Add the stock and mix the rice into the pan.\u00a0 Flame should be on low to medium.\u00a0 Cover with foil.
