Hi everyone, I guess I don’t need to say much about what’s happening outside.\u00a0 The good part is that it is the\u00a0peak fall color week in the area.\u00a0 The other part, we now have the heater on and as I type this, I’m wrapped up in a giant alpaca wool blanket.\u00a0 The garden is pretty much done for the year except for some of the hardier herbs.\u00a0 One\u00a0delicious and easy\u00a0thing to do right now is to make\u00a0some herbed butter.\u00a0 Chopping up the various herbs makes the kitchen smell heavenly.\u00a0 Add\u00a0one giant clove of minced garlic and it\u00a0is\u00a0just out of this world.\u00a0I used about 1\/3 portion of\u00a0room temperature\u00a0Ocooch Mountain Reserve hand rolled butter<\/a> from Alcam Creamery.\u00a0 It would be about 1 stick and 1\/2 if you’re using regular butter.\u00a0 In a bowl, I tossed in some chopped sage, oregano, dill weed, basil, rosemary, thyme, and garlic.\u00a0 I wrapped\u00a0the kicked up butter\u00a0in wax paper then placed it in a small freezer bag.\u00a0\u00a0I can’t wait to use\u00a0it\u00a0in deep winter for\u00a0roasted vegetables and meats\u00a0to remind me that my sweet summer garden will come again.<\/p>\n

Sometimes I forget just how gorgeous and peaceful it is up on Merry Christmas Mine Hill<\/a>.\u00a0 It is a 43 acre restored prairie and the site of one of the largest zinc mines in the country in the late 1800’s.\u00a0 There was a big find there on a Christmas day a long time ago, hence the name.\u00a0 Nature was certainly showing off during\u00a0my morning\u00a0ramble a few days ago.<\/p>\n
