width:48px;height:48px; margin: 0; padding: 0; border: none; box-shadow: none;\" src=\"https:\/\/driftlessappetite.com\/wp-content\/plugins\/social-media-feather\/synved-social\/image\/social\/regular\/96x96\/rss.png\" \/><\/a><p>Japchae is a\u00a0Korean noodle and vegetable side dish <em>(<a href=\"http:\/\/en.wikipedia.org\/wiki\/Banchan\">banchan<\/a><\/em>).\u00a0 I make it about once a week and it is a go to dish to bring to potlucks.\u00a0 You can use whatever vegetables are\u00a0in season.\u00a0 Mid-summer I even used some wild purslane\u00a0that were invading my\u00a0garden.\u00a0 Carrots, leeks, spinach, and cabbage are plentiful\u00a0now\u00a0and they are just beautiful in this dish.\u00a0 I can even imagine some golden colored and fuschia beets going well into it, maybe even some spaghetti squash.<\/p>\n<p>I was first introduced to it by my best friend from college, Jikyung.\u00a0 I especially loved the times when her mother would visit from Korea and I got invited to dinner.\u00a0 We ate a lot of jabchae, kimchi, and Korean pancakes.\u00a0\u00a0 Most of the time, we satisfied our cravings at Dorca&#8217;s restaurant\u00a0(which is\u00a0sadly now\u00a0closed) on Green St. on the University of Illinois Urbana-Champaign\u00a0campus.<\/p>\n<p style=\"text-align: center;\"><em>Sweet Potato Noodles &amp; Stir-Fried Veggies<\/em><\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/10\/koreanjabchae.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4394\" title=\"koreanjabchae\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/10\/koreanjabchae.jpeg\" alt=\"\" width=\"1000\" height=\"678\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/10\/koreanjabchae.jpeg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/10\/koreanjabchae-300x203.jpg 300w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/10\/koreanjabchae-150x101.jpg 150w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2012\/10\/koreanjabchae-400x271.jpg 400w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><!--more-->Before making this dish you will definitely have to go to your nearest Asian grocery store to purchase some sweet potato noodles.\u00a0 It will say &#8220;Korean sweet potato noodles&#8221;
