The first sign of spring in these parts is when there is available sustenance again, in the form of maple syrup.\u00a0\u00a0 This\u00a0was our third year visiting Cooks’ Woods for their sugaring and open house.\u00a0\u00a0Sugaring in the states\u00a0can be traced\u00a0back as far as the 1500’s.\u00a0\u00a0The whole process always feels like visiting an old friend.\u00a0 As\u00a0we turned down into their driveway\u00a0from Ebenezer Rd. there were\u00a0the familiar rows and rows of\u00a0Christmas trees (which\u00a0are sold\u00a0in season).\u00a0When the road\u00a0went up again, there was the\u00a0humble sugar shack.\u00a0 The steam billowed out of the chimney\u00a0and carried the scent of maple syrup.\u00a0 A little flag with maple leaves on it swayed by\u00a0the\u00a0door.\u00a0 Right when we\u00a0walked in, we were greeted by an even more intoxicating scent of syrup.\u00a0 The massive evaporator was\u00a0to the right.\u00a0 It\u00a0can boil\u00a0off 35 gallons of water per hour.\u00a0\u00a0 Ten gallons of sap will make about one quart of syrup (or 2 pints).\u00a0 We spotted Dave Cook,\u00a0who wore\u00a0a bright orange cap, chatting with visitors.<\/p>\n

On the other side of the sugar shack were some tables with\u00a0maple treats\u00a0made by Dave’s wife, Barb.\u00a0\u00a0\u00a0There were chocolate covered maple creams, pralines, candied popcorn, maple coconut cookies, maple-coffee trifle, maple cream cheese with crackers, and\u00a0even some maple meatballs.\u00a0 I watched a little girl sneak a\u00a0few more\u00a0maple creams\u00a0into her mouth right after asking her father if she could just have one.\u00a0 She looked pretty happy.\u00a0 Along the wall\u00a0were a couple of dispensers filled with maple coffee and maple grogg.<\/p>\n

\u00a0Keith and I always enjoy our visit.\u00a0 The best part was talking home some syrup.\u00a0 It was so fresh, the bottles were still warm.\u00a0 You just can’t beat that!\u00a0 There is still some syrup available, just give Dave a call.<\/p>\n
