\/><\/a><p>Hello everyone.\u00a0 Sorry for the silence.\u00a0 We have been a bit busy with life lately.\u00a0 Fortunately, we were able to sneak away a bit to one of our favorite destinations, Italy.\u00a0 I&#8217;m sure I will eventually get to telling you all about it.\u00a0 Meanwhile, I&#8217;m so happy to be back home and to\u00a0have some kitchen time.\u00a0\u00a0Here&#8217;s an\u00a0easy dish that I made for a wonderful young lady who took care of our Ollie dog while we were away.\u00a0 I found\u00a0some baby zucchinis in the garden with the flowers still attached and made a sort of variation of a stuffed zucchini flower dish I helped to make at <a href=\"http:\/\/driftlessappetite.com\/?p=5311\">Plum Lyon<\/a> last summer.\u00a0 Since I only\u00a0had a bit of zucchini, I decided to make\u00a0a quiche with caramelized onions, goat cheese, fresh herbs,\u00a0parmigiano, butter and a bit of olive oil.<\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2014\/06\/zucchini.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5441\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2014\/06\/zucchini.jpg\" alt=\"zucchini\" width=\"1000\" height=\"678\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2014\/06\/zucchini.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2014\/06\/zucchini-300x203.jpg 300w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2014\/06\/zucchini-150x101.jpg 150w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2014\/06\/zucchini-400x271.jpg 400w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><strong><!--more-->RECIPE<\/strong><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li><em>1 head onion<\/em><\/li>\n<li><em>4 oz. goat cheese (<a href=\"http:\/\/www.montchevre.com\/\">Montchevre<\/a>)<\/em><\/li>\n<li><em>a handful of herbs (I used chives, cilantro, basil, thyme, marjoram, and parsley.)<\/em><\/li>\n<li><em>6-8 baby zucchinis with flowers attached<\/em><\/li>\n<li><em>2 large eggs<\/em><\/li>\n<li><em>3\u00a0T. cream or whole milk <\/em><\/li>\n<li><em>1\/4 t. black pepper<\/em><\/li>\n<li><em>2 T. grated Parmigiano-Reggiano<\/em><\/li>\n<li><em>butter<\/em><\/li>\n<li><em>olive oil<\/em><\/li>\n<li>salt<\/li>\n<\/ul>\n<p>Thinly slice the onion and caramelize it with some butter and a bit of salt.\u00a0 It should take about 10 minutes until the onions become translucent and golden.\u00a0 Set aside.\u00a0 After that, chop your herbs and mix it into the goat cheese.\u00a0 Go ahead and add the caramelized onions.\u00a0 The warmth should make it really easy to marry the herbs and cheese.\u00a0 Slice the zucchinis lengthwise into halves.\u00a0 Make sure to pop off and discard each\u00a0flower stamen (the part with the the pollen).\u00a0 Butter a six inch cast iron pan or whatever baking dish you&#8217;d like to use.\u00a0 Line the bottom\u00a0 half of the zucchini, then a layer of most of\u00a0the cheese mixture, then the egg and milk mixture.\u00a0 On top add the rest of the zucchini.\u00a0 I stuffed the flowers with the remaining cheese mixture to give the flowers a bit of a raised appearance.\u00a0 Top\u00a0it off with the parmigiano and\u00a0a little drizzle of olive oil.\u00a0 Start it\u00a0cold in the oven and turn it to 375 degrees Fahrenheit.\u00a0 Bake for 15 minutes then turn the oven on to 400 degrees Fahrenheit.\u00a0 Bake for an addition 10 minutes then broil on high for an additional 5 minutes to get a little browning on top.<\/p>\n<p>I let it cool to room temperature and decorated it with cilantro blossoms, basil, and Scarlet Emperor bean flowers.\u00a0 It was served with a simple mixed green salad\u00a0drizzled with\u00a0sunflower oil.\u00a0 To drink, we had iced water infused with mint leaves.\u00a0 A perfect warm weather meal.<\/p>\n<p><a
