\/><\/a><p>Hello there!\u00a0 Keith and I\u00a0recently got back\u00a0from France.\u00a0\u00a0We\u00a0have been missing the gooey cheeses and\u00a0bistro cooking so I thought I would\u00a0make something special for our Friday night dinner.\u00a0 I found\u00a0this recipe for\u00a0roast pork with milk\u00a0at <a href=\"http:\/\/cooking.nytimes.com\/recipes\/8052-roast-pork-with-milk\">Cooking with the New York\u00a0Times<\/a>\u00a0last\u00a0autumn and we just love it.\u00a0 The temperature is supposed\u00a0to dip down into the\u00a0forties this weekend and\u00a0it is\u00a0just the perfect dish to\u00a0 have bubbling on your stove.\u00a0 If you&#8217;d like it a little heftier, serve it with some polenta, orzo, roast potatoes, or a grain of your choice.\u00a0 Don&#8217;t forget\u00a0to\u00a0have\u00a0it with a glass or two of your favorite wine.\u00a0 I suggest going to\u00a0the farmers&#8217; market\u00a0to purchase some local pork, veggies and herbs\u00a0to accompany\u00a0this dish.<\/p>\n<p style=\"text-align: center;\"><em><strong>Roast Pork with Milk<\/strong>\u00a0(with <a href=\"http:\/\/buresberrypatch.blogspot.com\/\">Bures<\/a> asparagus, chive left;\"><strong>\u00a0<!--more-->RECIPE<\/strong><\/p>\n<p style=\"text-align: left;\"><em>Ingredients<\/em><\/p>\n<ul>\n<li>\n<div style=\"text-align: left;\"><em>3 lb. bone in\u00a0pork shoulder (<a href=\"http:\/\/www.mineralpointmarket.com\/marrs-valley-view-farms.htm\">Marr&#8217;s Valley View Farms<\/a>)<\/em><\/div>\n<\/li>\n<li><em>salt<\/em><\/li>\n<li><em>black pepper<\/em><\/li>\n<li><em>1 t. lard<\/em><\/li>\n<li><em>1 t. olive oil<\/em><\/li>\n<li><em>4 medium sized onions<\/em><\/li>\n<li><em>1 quart whole milk<\/em><\/li>\n<li><em>4 cloves garlic<\/em><\/li>\n<li><em>a few sprigs of thyme<\/em><\/li>\n<\/ul>\n<p>Rub the pork with salt and pepper.\u00a0 Heat the lard and oil in a Dutch oven or tagine and brown the meat on all sides.\u00a0 Add the onions and cook until brown.\u00a0 Total cooking time, 10 minutes.\u00a0 Drain the excess fat and add the milk and thyme.\u00a0 Bring to a boil, cover it\u00a0and simmer for\u00a0one hour and a half.\u00a0 After that, keep the lid open and simmer for another one hour and a half.\u00a0 Discard the thyme stems.\u00a0 Grate the garlic and add it to the pot.\u00a0 Preheat the oven to 450 degrees F.\u00a0 Place the pork in the a different pan and roast for 10 minutes.\u00a0 Use an immersion blender to make the cooking liquid smooth.\u00a0 This will be the sauce.\u00a0 You can add a little cream\u00a0and butter but it is not necessary.\u00a0 Enjoy!<\/p>\n<p style=\"text-align: center;\"><em><strong>Spring Bouquet <\/strong>(phlox, ribbon grass,
