width:48px;height:48px; margin: 0; padding: 0; border: none; box-shadow: none;\" src=\"https:\/\/driftlessappetite.com\/wp-content\/plugins\/social-media-feather\/synved-social\/image\/social\/regular\/96x96\/rss.png\" \/><\/a><p>I&#8217;ve long been an admirer of Yotam <a href=\"http:\/\/www.amazon.com\/s\/?ie=UTF8&amp;keywords=cookbooks+ottolenghi&amp;tag=googhydr-20&amp;index=stripbooks&amp;hvadid=43500133010&amp;hvpos=1t1&amp;hvexid=&amp;hvnetw=g&amp;hvrand=16456450673909386926&amp;hvpone=&amp;hvptwo=&amp;hvqmt=b&amp;hvdev=c&amp;ref=pd_sl_82e6ofxha9_b\">Ottolenghi&#8217;s cookbooks<\/a>.\u00a0 Keith and I finally had a chance to eat at one of his restaurants recently and the experience left us pledging to make more unique flavor combinations, especially when preparing salads.\u00a0 Our market bag last Saturday consisted of mix lettuces and French breakfast radishes from <a href=\"https:\/\/www.facebook.com\/pages\/Shooting-Star-Farm\/174931595957284?fref=ts\">Shooting Star Farm<\/a>\u00a0and a bundle of asparagus from <a href=\"https:\/\/www.facebook.com\/buresberrypatch?fref=ts\">Bures<\/a>.\u00a0 We also got invited to one of our first potlucks of the season.\u00a0 Local produce and a party is always a great motivation to make something fun!<\/p>\n<p style=\"text-align: center;\"><strong><em>Spring Salad<\/em><\/strong><\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/springsalad.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5646\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/springsalad.jpg\" alt=\"springsalad\" width=\"1000\" height=\"667\" srcset=\"https:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/springsalad.jpg 1000w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/springsalad-300x200.jpg 300w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/springsalad-150x100.jpg 150w, https:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/springsalad-400x266.jpg 400w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><!--more-->The first step is to roast some sweet potatoes.\u00a0 Cube 2 large sweet potatoes, drizzle with a little olive oil, sprinkle it with a bit of salt and roast for 40 minutes in a 400 degree F oven.<\/p>\n<p>The dressing takes a little bit of time but it is well worth it.\u00a0 Keith made the yogurt but a good store bought whole milk yogurt will work well.<\/p>\n<p><strong><em>Yogurt Dressing<\/em><\/strong><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li><em>1 cup yogurt<\/em><\/li>\n<li><em>1 T. olive oil<\/em><\/li>\n<li><em>6 cloves garlic<\/em><\/li>\n<li><em>4 anchovies<\/em><\/li>\n<li><em>1 t. mustard<\/em><\/li>\n<li><em>1 t. nigella seeds<\/em><\/li>\n<li><em>1 t. black pepper<\/em><\/li>\n<li><em>3 juniper berries<\/em><\/li>\n<li><em>1 T. sumac<\/em><\/li>\n<li>1 T. chopped chives<\/li>\n<li>salt to taste<\/li>\n<\/ul>\n<p>1. Gently roast the mustard, nigella, and juniper seeds in a pan on medium low heat\u00a0until\u00a0you can smell the spices\u00a0(about 5 minutes). Grind after roasting and add it to the yogurt.<\/p>\n<p>2. Heat the olive oil in a pan\u00a0and add the thinly sliced garlic and\u00a0anchovies into it.\u00a0 Cook until the garlic is soft and the anchovies has melted into a paste.\u00a0 Add this to the yogurt mixture.<\/p>\n<p>3. Grind the black pepper and add to yogurt mixture.<\/p>\n<p>4.\u00a0Blend the mixture using an immersion blender or food processor to make it smooth.<\/p>\n<p>5.\u00a0 Gently spoon\u00a0in the chopped chives into the smooth dressing.<\/p>\n<p>6.\u00a0 Add salt, to taste.<\/p>\n<p>7. Place the dressing in a container and refrigerate.<\/p>\n<p style=\"text-align: center;\"><em><strong>French Radishes<\/strong><\/em><\/p>\n<p><a href=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/frenchradishes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5648\" src=\"http:\/\/driftlessappetite.com\/wp-content\/uploads\/2015\/06\/frenchradishes.jpg\" alt=\"frenchradishes\" width=\"1000\" height=\"709\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p><em><strong>Now it&#8217;s time to prepare the vegetables.<\/strong><\/em><\/p>\n<p>Choose a platter for serving the salad and place it in the freezer or refrigerator to cool.<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>tango lettuce (Shooting Star Farm)<\/li>\n<li>French radish (Shooting Star Farm)<\/li>\n<li>asparagus (Bures Berry Patch)<\/li>\n<li>chive blossoms<\/li>\n<li>1\/2 c. black walnuts<\/li>\n<\/ul>\n<p>Gently roast the walnuts in a pan until you can smell it, roughly chop it, then set aside.\u00a0 Clean and dry your veggies.\u00a0 Make thin ribbons of asparagus and radish using a mandolin or a peeler or you can slice it however you like.\u00a0 Take your platter out of the freezer\/refrigerator and line it with the lettuce.\u00a0 In a seperate bowl mix all of the veggies and walnuts with the dressing.\u00a0 Use as little or as much as you like.\u00a0 Place the dressed veggies atop the lettuce.\u00a0 I saved a little bit of each veg to decorate the top.\u00a0 The chive blossoms and the asparagus tops makes it look very festive.\u00a0 A little dash of sumac on top and you are\u00a0good to
