I’m continuing to explore my new found love for beets. I had some roasted ones leftover so I decided to incorporate them into today’s breakfast. Voila! I came up with these wonderful “Red Velvet” pancakes. They looked a little strange on their own so I decided to make another batch using browned butter for a nice contrast. I used the “Good Old Fashioned Pancakes” recipe from Allrecipes.

RECIPE
“Red Velvet” Pancakes
Ingredients I added to the original recipe.
- 2 oz. cream cheese
- 1 extra T. of sugar
- 2 t. cocoa powder
- 1/2 medium sized roasted beet
Browned Butter Pancakes
*I added 1 more T. of butter for a total of 4T. and browned them before adding into the batter.
Results:
I’m used to having fluffy and airy pancakes and this recipe yielded slightly more dense ones . These were a delightful change. The texture reminded me a bit of Dutch Baby pancakes. (Not too heavy though). When Keith came into the kitchen he groaned and had a disgusted look on his face. I urged him to have a little taste and he loved them! He kept trying to take some more so I had to send him away until I was done cooking. Both pancakes were delicious on their own but we just had to try some using our favorite maple syrup from Cooks’ Woods.
