The eggplant is my favorite vegetable and I think this is the perfect way to enjoy its delicate flavor. Tortang Talong in Tagalog or eggplant omelet is a go-to dish for many Filipino households. When I was young, I would only eat the end with more egg since I didn’t like the eggplant taste. Now I can’t get enough of it.

RECIPE
- Japanese eggplant
- egg
- olive oil
- salt
- pepper
To get the best flavor I suggest roasting the eggplant on a grill or open flame such as a gas burner. Another thing you could do is to broil the eggplant until the skin is black and dry. Let it sit for a few minutes so that it will easy to take off the peel. Mash the eggplant with a fork to create a fan shape and dip in the beaten egg. Fry until the egg is cooked. I like mine brown and crispy around the edges. Enjoy with some steamed Jasmine rice.
